The freshness of green coffee is important

We have been roasting coffee since 2016. Right from the start, we knew that not only how fresh the coffee is when we brew it, but also how fresh the green coffee is when it is roasted, has a big impact on the taste.

Different origins age at different rates. As a general rule, green coffee grown at high altitude and developed more slowly, over a longer period of time, also ages more slowly. As a rule, this applies to all specialty coffee, green coffee of the highest possible quality.

We always roast the freshest green coffee possible ourselves. As a result, when new harvests arrive from the same origin, we sometimes have some green coffee left over. Although we prefer to sell the fresh green coffee, we are happy to be able to sell the slates here – at a much better price and give more home roasters the opportunity to drink a freshly roasted coffee!

Since we roast all the green coffee we sell ourselves, we are very familiar with how it behaves in the roaster. So don’t hesitate to contact us if you want general advice on how to roast your own green coffee. Our machines are of course very different, but we can still share our experiences on how the different phases develop.

Store your green coffee smartly

Store your green coffee smartly. As with roasted coffee, green coffee’s biggest enemies are air, heat, light and moisture. Keep your unroasted coffee away from it. Don’t leave it in a hot room, keep your green coffee in a cool place, preferably cold. You can also freeze it, as this virtually stops the aging process. But don’t take it back and forth out of the freezer between roasting sessions, or condensation will form each time. And remember that green coffee is like mushrooms, it absorbs its surroundings. Don’t store your green coffee too close to other foods or anything that gives off strong smells.
