This green coffee from Fazenda Monte Belo in Patrocínio, Cerrado, is a blend of four classic Brazilian varieties: Mundo Novo, Red Catuai, Yellow Catuai and Yellow Bourbon. Grown by José Ferraz at an altitude of 900-1,260 meters in well-drained, iron-rich soil, this lot produces dense beans with naturally low acidity, high sweetness and pronounced nuttiness – characteristics that make it particularly well suited for dark roasting.
After selective harvesting, the coffee is dried under controlled conditions. Even humidity, slow drying and careful multi-stage sorting produce a stable green coffee that behaves very predictably during roasting, even in simple home environments. The coffee can withstand high charging temperatures, withstand longer roasting times without shutting down, and gives full development even at darker degrees – with preserved structure and clear aroma.
It was this coffee that formed the basis for the Dark Roast of the Year at Kafferosteriet Koppar – a clear proof of quality and roastability. In the cup, notes of dark chocolate, brown sugar and roasted nuts (hazelnut, para, walnut) dominate, with a deep and smooth mouthfeel. The acidity is low, but offers a subtle note of dried fruit that lifts the whole. A green coffee for those looking for fullness, balance and aromatic complexity in a darker register – regardless of brewing method.
