YCFCU (Yirgacheffe Coffee Farmers Cooperative Union) operates three washing stations in the Yirgacheffe region. Here, small farmers bring the hand-picked, freshly harvested coffee berries, which are first pulped on the skin and pulp. The beans are then placed in a water bath and natural fermentation begins. After 24-36 hours, the beans are sorted and washed clean, before being left to dry on raised African beds for just under 2 weeks.
This raw coffee is advantageously roasted slightly lighter to bring out the stone fruit and bergamot so characteristic of the region. The coffee is very citrusy, lemonade-like and floral. An Ethiopian textbook example.
Suitable for both filters and espresso.
