At an altitude of 1857 meters in Planadas, Tolima, Jorge Elías Rojas Vásquez runs the 4.5 hectare La Roca Estate. Surrounded by forest, waterfalls and protected natural zones, Yellow Caturra is grown here under stable microclimatic conditions – conditions that allow for slow ripening, high sugar accumulation and aromatic complexity already in the berry.
Jorge is internationally recognized for its precision in the honey process. This micro-lot undergoes a double fermentation: first 36 hours in berries, then another 36 hours in mucilage after peeling off the shell. Drying takes place in two stages, where the beans are first brought to around 15% moisture under monitored conditions, allowed to rest for 48 hours to stabilize water activity, and then finally dried to storage level. The result is a green coffee with high sweetness, low water activity and excellent process purity – ideal for filter roasting with clear flavor development and consistent response in the drum.
Light to medium roast brings out the complex sweetness and juicy acidity of the coffee, with flavor notes of tangerine, ripe pineapple and plum, followed by peach, hazelnut and vanilla floral aromas. The body is silky, the finish long and clean. A textbook example of what happens when experience, microclimate and processing methodology come together – and a green coffee that is best in the hands of home roasters with a sense of balance and nuance.
