Ethiopia Tero Farm – beard dried green coffee (1 kg)

Origin: Guji, Southern Ethiopia
Producer: Zeleke family, Tero Farm
Altitude: 1 800-2 200 m
Varieties: Ethiopian Heirloom
Process: Dried
Harvested: 2024/2025

Deep in the forests of the Guji region, at altitudes between 1,800 and 2,200 meters, lies Tero Farm – a farm run by the Zeleke family with a strong focus on sustainable farming, biodiversity and long-term engagement with the surrounding community. Guji is in many ways Ethiopia’s most exciting coffee region right now: mineral-rich volcanic soil, a dramatic elevation profile and an exceptionally broad genetic heritage of Ethiopian Heirloom – the collective name that encompasses the thousands of local selections that have emerged from the country’s unrivaled coffee gene pool. Where a washed lot from the same farm usually highlights the elegant, floral and citrusy side of the region, this lot is a completely different acquaintance. Here, the same terroir has met the berry-dried process – and the result is a coffee where the depth of fruit and the jammy sweetness take center stage.

The berries are hand-picked at full ripeness and slowly dried in their flesh on raised African beds for around 18-21 days, with regular turning and protection from direct sun during the hottest hours. The slow drying allows a controlled fermentation inside the berry – an interaction that converts sugars into complex aromatics and builds up the characteristic berry-like sweetness that distinguishes a top-class berry-dried Ethiopian coffee from a mediocre one. The raw coffee has good density and clean separation, and responds best to medium to light roasts. The profile is made for filters and pourovers, but for those who have mastered the art of brewing espresso on light- or medium-roast Ethiopian coffee, this lot will be almost magical – with a sweetness that is highlighted in a way that few other origins can match.

In the cup, this is a coffee where the fruit makes an immediate entrance. Ripe strawberry and blueberry carry the aroma, surrounded by a jammy sweetness that pulls towards toffee and red currant. Behind the fruitiness is a smooth milk chocolate nuance that gives structure, and the finish is long, vinous and vibrant. A raw coffee for the home roaster who wants to explore Guji’s berry-dried side in its most expressive form – and who is not afraid to let the fruit take center stage.

This green coffee arrived at the roastery on December 8, 2025 and is from the 2024/2025 harvest.
