When the Japanese Miaki family started growing coffee in southern Brazil in the 1970s, they had no idea that a severe frost would bring them to one of the country’s most exciting coffee regions. After the frost damage in Paraná, they chose to move north to the Cerrado plateau in Minas Gerais. Here, in the volcanic region of Chapada de Ferro outside Patrocínio, they became among the very first coffee farmers in 1980 – pioneers in an area known today for its exceptional coffee. The nutrient-rich volcanic soil and high altitudes provide the conditions for beans with both purity and complexity, a combination that has become Cerrado’s signature.
The lot consists of Yellow Bourbon, an Arabica variety that suits the honey method almost perfectly. After harvesting, the skin is removed while the sweet pulp mucilage is left on during drying, giving the beans an extra dimension of sweetness and body compared to a conventionally washed lot. The raw coffee has good density and a high roasting flexibility – it can be roasted in any way, but at Koppar we medium roasted it to be enjoyed as filter coffee. And that particular grade is worth highlighting, because it works in practice with all brewing methods. This is, after all, a classic Brazilian espresso roast at heart, and in medium roast you get the best of both worlds: a round, balanced filter cup and a rich, creamy base for espresso, moka or press pot.
In the cup, you are greeted by a soft body with a lively citrus acidity that brings freshness. The sweetness is tangible – the clear imprint of the honey process – and is beautifully balanced by notes of chocolate and berries. A harmonious and accessible coffee, classically Brazilian in the best way. A raw coffee for the home roaster who wants a versatile working batch with clear sweetness and a story worth telling in the cup.
