Few countries produce specialty coffee with the same consistent quality and breadth as Colombia. With its three mountain ranges of the Andes, its myriad microclimates and a coffee movement that has grown out of generations of small-scale producers, the country has an almost unrivaled ability to consistently deliver cups with both precision and soul. Huila is in many ways the epicenter of this tradition – and Pitalito, located in the south of the region, is among the most sought-after growing areas in all of South America. Here, high slopes, stable rainfall patterns and nutrient-rich volcanic soil combine to give the coffee an aromatic fruitiness and sweetness that has become the signature of the region.

Las Moras is the result of several small farmers in the Pitalito area joining forces to supply berries from their respective parcels, grown between 1 700 and 1 900 meters altitude. The lot includes three classic Colombian varieties: Caturra, known for its balanced sweetness and structure, Bourbon Amarillo with its round, creamy character, and Colombia, a resistant variety developed by the country’s own research institute Cenicafé to combine quality with resistance to the rust fungus. After selective hand-picking, the berries undergo a controlled 24-hour oxidation before the skin and pulp are removed – an extra step that gives the green coffee a clearer aromatic backbone and a more pronounced sweetness than a conventionally washed lot. Next, the beans are thoroughly rinsed and slowly dried to lock in the nuances. The result is a green coffee with good density, clean separation and high roast flexibility – it responds well to medium roasts for filters, but also holds together well on slightly darker profiles for espresso, where sweetness and body are lifted without losing the underlying fruitiness.

In the cup, Las Moras is both lively and round. A velvety body carries notes of blackberry, juicy peach and honey, with a light vinous undertone that adds depth without taking over. The finish is long and soft, with lingering sweetness and a hint of cocoa in the background.
