Organic Plantation AA arabica from South India is a rarity. We who roast this green coffee strive for a coffee with great natural sweetness, but at the same time an absolute absence of the fruit we usually see in specialty coffee of this high quality. Instead, there is a lot of chocolate, in the raw cocoa direction, with a slight pepperiness and a little more nuttiness. But it’s chocolate we bring with us primarily as a flavor note here.
Roast this green coffee to medium-dark or even darker and you will achieve excellent results in both espresso and filter brewing.
Ramesh Rajah’s family have been coffee farmers for 70 years. High up in the mountains, inland in southern India, we find their farm Cauvery Peak. Here the gods are generous; the soil is outstanding, as is the biodiversity – a necessity for coffee farming at this level. Ramesh sees everything from a broad perspective, he depends on the community around him, and the community on him. He pays well above standard wages to his primarily female employees on the farm. He provides shelter and extracurricular activities for the children. If you take such good care of both the environment and people, the end result is also outstanding.
