In the eastern foothills of the Andes, where Peru’s rainforest meets the highland slopes around Villa Rica in Oxapampa, more than 50 women coffee farmers have joined forces in the CEMCAVIR (Cooperativa Ecológica de Mujeres Cafetaleras Villa Rica). It is an initiative that stands out, both socially and practically: in addition to coffee farming, the families also engage in small-scale farming of pacu —a freshwater fish that lives in the clean waterways around the farms—which provides both supplemental income and an additional source of protein for their households. It is a clear example of how coffee can be a tool for long-term change, not just an export commodity, and the result in the cup bears the mark of the very care and pride that such work brings.
This lot consists of a broad genetic palette— Caturra Rojo and Amarillo, Typica, Pache, Catimor, Limani, and Bourbon —grown at altitudes between 1,500 and 1,900 meters, where the slow ripening process lays the foundation for its complexity. The honey process involves leaving the pulp’s mucilage on the beans during drying, which results in a denser structure and a pronounced sweetness in the green coffee. It is precisely this richness that allows this lot to handle a dark roast exceptionally well without losing any of its nuances —we dark-roasted it ourselves and think it works fantastically at that level. As an espresso, it provides an excellent base with a round crema and body, but it’s just as delicious as a pour-over for those seeking richer, fuller notes.
In the cup, this is a rich and robust coffee. Dark chocolate and roasted hazelnut form the foundation, atop which a distinct honeyed sweetness and muscovado sugar elevate the overall flavor. The body is velvety and round, and the finish lingers with notes of caramel and nuts. If you add milk to the espresso, the profile transforms into something delightfully crunchy—like a liquid version of toffee. A green coffee for the home roaster seeking richness, sweetness, and a cup with both depth and character.
