The deep, rich aroma features jammy blackberries, ripe plums, brown sugar and earthier nuts. If you let the cup cool, the cool aromas of sweet baking spices and cinnamon will bloom more and more as time goes by. Don’t be in a hurry!
The sweet cinnamon is with us throughout the experience, as are soft rum raisins and dark chocolate. The long and balanced aftertaste is long lasting.
This caturra is harvested late to get extra sweet berries and kick-start the anaerobic fermentation, where the pulp is allowed to dry into the coffee bean in an airtight environment. It gives us an exciting coffee with one of the most “cinnamon-like” aftertastes we’ve ever experienced. We like to drink it over and over again as filter coffee.
