We prefer to roast this green coffee for filter brewing, but if you can really handle the acidity of an espresso, you might be happy to roast it for this brewing method as well. We sense red currants, star fruit, plenty of chocolate and a lively juiciness. A coffee of this high quality obviously comes with a great sweetness, great mouthfeel and if we summarize it in just three words, it will be “a classic special coffee Colombian”!
In the far north-east of Colombia, in the region of Santander, the first Colombian coffee bushes are said to have grown. Up here, the coffee stars really are right most of the year. On high mountain slopes, the eastern Andes, temperatures that creep down to 15 degrees in the morning and rise to 28-30 during the day, and with two rainy seasons during the year create perfect conditions for growing a first-class coffee. What distinguishes this part of Colombia from the rest of the country is that the main crop completely dominates. A full 80% is harvested between October and January and only 20% between April and June. At the bottom of southern Colombia, the ratio is 50/50 between main crop and fly crop.
