In southern Colombia, on the high slopes of Bruselas in Huila, Typica, Bourbon and Timor Hybrid are grown by small-scale producers with long experience. The high altitude (1,780-1,900 m) and volcanic soil contribute to dense beans with a natural balance of acidity, sweetness and body – a prerequisite for highly complex processes.

This coffee has undergone dual fermentation: a two-stage process where the berries are first fermented aerobically in an open environment, and then anaerobically in closed vessels to deepen the sweetness and create structure. Fermentation takes place under carefully controlled temperatures, without added yeast cultures. Afterwards, the berries are slowly dried on raised beds until the desired moisture level and stability is achieved.

When roasted, the beans show an even response and can withstand both longer drying phases and controlled development. The appropriate roasting profile for filters brings out a fresh, citrus-driven acidity and soft, caramelized sweetness. The flavor pulls towards milk chocolate, toffee and ripe orange – a cup that combines clarity with round mouthfeel and carries the modern character of Huila in every brew.

This green coffee arrived at the roastery on November 5, 2025 and is from the 2024/2025 harvest.
