The fifth generation of coffee farmers, Eduardo Rizo, at Finca San Ramón is about to hand over to the sixth, his sons Eduardo José and Juan José. The coffee farm is inherited and so is any consideration for nature. In the Jinotega region, several different microclimates meet the volcanic soil, but never do the coffee bushes thrive as well as in the Rizo family, where they grow in the shade of other rainforest trees!
We like to roast this raw coffee darker and enjoy it in its lonely majesty as an espresso. Here, the family’s coffee can be described as the finest dark chocolate with vanilla notes. Not as sweet as milk chocolate but we still sense a creaminess, like butterscotch, and the short cup is rich with notes of dark ripe berries. The cranberries are present in both the aroma and the intense aftertaste.
