Guatemala is always a great coffee destination. It really stands out for its balance. The terroir is perfect. Like here, at 1750 meters above sea level, where Rodolfo Garcia’s coffee berries grow up in the fertile soil. Rodolfo can conjure up the most wonderful flavors and aromas, and today he processes his various micro-lots in almost every way. This green coffee is dry processed, which brings out the sweetness more than any other method. The balanced acidity is sweet like the whole coffee, like a baked lemon. The natural process also adds a slightly punchy, mulled feel with raisins and almonds. We can absolutely roast this raw coffee for both espresso and filter. The flavors are best developed if you roast it medium roast.
