When we have it a little darker and cooler outside, we like to roast Guatemala a little darker than usual. We did this a short time ago at Kafferosteriet Koppar and got a warming dark cup with a lot of cocoa in both aroma and flavor, slight nuttiness and a lovely creaminess as of burnt cream. Huehuetenango is Guatemala’s highest coffee-growing region. Warm winds from Mexico’s adjacent plains protect the coffee bushes from frost and enable flowering at over 2000 meters altitude! The small farmers behind this coffee also do most of the work themselves – harvesting, washing and drying the beans – before they are passed on for quality control, polishing and shipping to us in Tyresö, Sweden. A rich experience with big dark flavors.
