In Konga kebele, the village of Yirgacheffe in southern Ethiopia, coffee berries are grown in the traditional way, in the gardens of small farmers. That’s why we often call the coffee from here “garden coffee”. Sometimes, less often, coffee is also prepared in the traditional way – using the dry, berry-dried method. This is one such occasion, where peel and pulp, have been given time to dry into the bean after harvest.
The drying of the berries gives us a slightly richer coffee than we are used to from Ethiopia. If the Ethiopian acid usually appears in the form of something reminiscent of a small slice of lemon in the coffee, the lemon in our Konga is more of the baked variety, sweet and round, think lemon marmalade. The fruit has been toned down somewhat, but the coffee is still sweet and pleasant with cinnamon, brown sugar, vanilla and caramel in taste and aroma.
This is an Ethiopian coffee for all of us who already appreciate the character from here. But it is also a coffee for all of you who are “new” to Ethiopia and don’t want to go straight for the fruit that appears more in the washed coffees.

Because just as coffee should always be freshly roasted when you drink it, the freshness of the green coffee also has a huge impact on the end result.
