In the heart of Tarrazú, at an altitude of 1,800 meters, Luis Anastasio “Tacho” Castro runs the small-scale but influential micromill Juanachute – one of the first in Costa Rica to take the entire post-processing of the coffee into the producer’s own hands. Here, each micro-lot is handled with precision, from selective picking to final drying, giving growers like Tacho full control over quality and character.

This green coffee is made from the Caturra and Catuai varieties and processed using the red honey method. The mucilage is left on during drying, which increases sweetness and complexity – but requires experience and careful monitoring. The beans are well suited to filter roasting and, when properly developed, produce aromatic cups with flavor notes of ripe plum, toffee, red berries and a soft touch of vanilla.

Juanachute is more than a micromill – it is a symbol of the movement that has redefined the role of the producer in the coffee value chain. With this lot, you get a green coffee with a clear identity, high process quality and a depth of flavor that bears traces of altitude, craftsmanship and history.

This green coffee arrived at the roastery on September 27, 2024 and is from the 2024 harvest. The age of this green coffee is reflected in the pricing. It is extremely high quality for this money!
