Sometimes, with a bit of luck and if you’re on your toes, special occasions arise. This is one of them. We have 6.28 kg x 2 left of one of the very best coffees we roasted as Coffee of the Month at Koppar. We’re putting this on a first-come, first-served basis and promise you won’t be disappointed with this raw coffee. This is how we described Colombia Santander on the Koppar website:

Legend has it that Colombian coffee was born in the region of Santander, on the slopes of the Andes, around 300 years ago. When the Jesuits confessed their sins to the priest Francisco Romero, they were banished and the punishment was to sow coffee seeds, which became bushes that soon bore fruit and eventually coffee cultivation spread to other departments.

Today, 22 women at Finca Santa Maria carry on the tradition. And what a wonderful way they do it! A honey-processed castillo gives us a soft, rich and very balanced coffee. The craftsmanship is precise and the method enhances the finest sweetness, in the form of brown sugar and vanilla. The aromas are vinous, the red berries are jammy. The soft milk chocolate, rum raisin and more dried fruit emerge in the taste.

With great devotion, we enjoy the coffee of the women farmers. Colombia we like to take in big cups and fill our mouths with. The coffee then takes on a new dimension and the fullness spreads – soft and pleasant.

In Koppar we roasted this green coffee primarily for filter brewing, but at the roastery we also drank it as cappuccino. A little more fiddling to get the espresso brewing, but worth the effort.

Since we primarily roast our own coffee, but also sell it unroasted, we are very keen to ensure that all our green coffee is from the freshest possible harvest. Because just as coffee should always be freshly roasted when you drink it, the freshness of the green coffee also has a huge impact on the end result.
