On the slopes of the Apaneca-Ilamatepec massif in El Salvador, Carlos Pola grows 100% Pacas – a natural mutation of Bourbon that was discovered in the country in 1949 and has since become a backbone of Salvadoran specialty coffee. The variety is characterized by compact plant shape, good yields and a cup quality with sweet fruitiness, chocolate notes and smooth body – especially when processed with precision.
In this micro-lot, the berries have undergone an anaerobic fermentation in closed bags for around 72 hours, followed by berry drying on raised beds for just over three weeks. The anaerobic fermentation triggers a controlled enzymatic process in which sugars and organic acids are converted and bound into the bean – resulting in a green coffee with deeper sweetness, complex aroma and increased cup roundness. Drying is done slowly under shade, with regular turning to ensure even humidity and preserve the purity of the profile.
When filter roasted, this coffee shows excellent stability. In the cup, it provides a clear backbone of dark chocolate and muscovado sugar, complemented by juicy peach, warm honey and soft caramel notes – with a full, yet elegant body.
This green coffee arrived at the roastery on September 17, 2025 and is from the 2024/2025 harvest.
