Ederval Sartori is the youngest of the Sartori family, who can truly be said to have coffee in their blood. In 2010, Ederval bought his own farm and Sítio Bateia, the farm he grew up on, has become a partnership with three coffee farmers: José Fernando Fortunato, Ederval himself and Edson Pires Sartori. Together, you till the soil and share the harvest equally to process the coffee berries on your own.

Ederval has used the pulped natural method here for the Red Catucai Arabica variety after removing only the very outer skin of the coffee berry. This method is similar to honey, but unlike honey, all of the mucilage (the jelly-like material that surrounds the bean) remains when the drying of the bean begins. The process gives us a very elegant brew, where we actually have a (minor) part of fruity nuances emerging with the otherwise clear chocolate and nuttiness of Brazil. We sense some cranberry, faint citrus and floral notes.
