This specialty coffee from the island of Sumatra in Indonesia is processed using the local Giling Basah method. In short, the outer skin of the coffee berry is pulped off immediately after harvesting. The beans then lie in their mucilage for 24 hours before being washed and dried. Already at 30-35% humidity, the pergamino shell is removed and then the coffee is further dried down to 10-12% humidity. The process produces a slightly bluish-green green green coffee, a large body and a classic Indonesian flavor profile.
