Luis Alberto Balladarez is one of the most well-known coffee farmers in Nicaragua. He bought the La Bendicion coffee farm in 2008 and has been growing coffee on 66 of Fincan’s hectares ever since. His meticulous notes – on varieties, ripeness, location on the farm, sweetness, and various fermentation processes – have richly rewarded him over the years. In 2018 he won the country’s Cup of Excellence! Pacamara is a great bean in every way. As a cross between Pacas and the elephant bean Maragogype, it really stands out. The size of the beans contributes to the balance of the cup. Sweet and juicy, with macadamia nuts, ripe plum, faint notes of cinnamon, some chocolate and lively raspberries. We can roast this green coffee both for filter brewing and as espresso.
