The legend tells of Kaldi the shepherd, whose goats one day ate small red berries from an unknown tree – and suddenly danced with energy. Kaldi also tried the berries and soon realized their power. This is how coffee is said to have been discovered, right here in the Ethiopian highlands, the country considered by many to be the cradle of arabica coffee. In Sidamo, south of the legendary Yirgacheffe region, small farmers grow their coffee trees at altitudes between 1 200 and 1 800 meters. Farms are rarely larger than one hectare, giving each bush the care it deserves – and contributing to the remarkable purity and nuance that characterize the region’s best lots.
The lot consists of Mixed Heirloom – the collective name for the thousands of local selections that have emerged organically from Ethiopia’s unrivaled coffee gene pool, the world’s most genetically diverse. The berries are hand-picked at full maturity and prepared using the washed method, where the pulp is removed and the beans are fermented and rinsed clean before drying – a process that brings out the clearest and most precise flavors in the cup. The raw coffee has good density and clean separation, and although all roast levels work, it is in light to medium roast that the coffee shows its finest side. The profile is tailor-made for pourovers and filters, where the floral aromas and tea-like texture have the most room to express themselves.
In the cup, you are greeted by a lively and bright experience. Jasmine and citrus in the aroma, caramel and ripe stone fruit in the taste. The body is silky and tea-like, with an acidity that is both sweet and lively. The finish is reminiscent of black tea – elegant and long. This is the coffee that reminds us of where it all began, and a raw coffee for the home roaster who seeks the classic Ethiopian expression in its purest, most elegant form.
This green coffee arrived at the roastery on February 3, 2026 and is from the 2024/2025 harvest.
