In southern Ecuador, where the microclimate of the Andes creates long and stable ripening periods, the Asociación Agroartesanal de Pequeños Productores produces small volumes of high-quality green coffee. The growers in Vilcabamba work at an altitude of 1,500 meters with classic Arabica varieties such as Typica, Bourbon and Caturra – genetically stable and well known for their high sensory potential when subjected to the wet method.
The berries are selectively hand-picked between June and October, then hulled and fermented in water before drying. This wet process ensures a clean and nuanced cup character and gives the raw coffee clear separation, facilitating even development in the drum. The beans respond well to medium to light filter roasting, where you can bring out its natural sweetness and elegant aromas.
The result is a low to medium density green coffee with good roast stability. In the cup you can expect creamy body and notes of dulce de leche, vanilla, dried stone fruit and caramel – a smooth, expressive coffee with a long aromatic finish and high roast flexibility.
This green coffee arrived at the roastery on March 4, 2025 and is from the 2024/2025 harvest.
