In Dumerso, one of Yirgacheffe’s most sought-after micro-regions, Ethiopian Heirloom varieties are grown at an altitude of 1,950 meters in mineral-rich soil and an ideal micro-climate. Here, the coffee is processed by the dry method – berry drying on raised beds – which intensifies the natural aromas and gives the cup its characteristic sweetness and complexity.
The beans are small, dense and selectively hand-picked during the 2024 harvest. Drying is slow to preserve the stability and purity of the cup, which is essential to achieve the floral elegance Yirgacheffe is known for. For filter roasting, this green coffee provides good development control in the drum and responds particularly well to light to medium roasting, where the fresh acids and floral top notes come into their own.
With the right roast profile, you get a cup with distinct hints of baked lemon, soft vanilla, nutty texture and a silky body. A lively but balanced acidity frames the flavor experience and lifts the honey sweetness towards a bright and long finish. A raw coffee for home roasters looking for precision, floral heights and an expression where process and origin fully interact.
