Just outside the capital of Costa Rica, San José, we find Hacienda Sonora. The farm, which has been owned by the Guardia family since the 1970s, is 100 hectares in size and grows about 20 different varieties of arabica. This is the Villa Sarchi variety, which is a mutation of Bourbon where a small genetic difference has made the plants grow smaller. Villa Sarchi was discovered in Costa Rica, near the town of Sarchi, just a few kilometers from Hacienda Sonora, in the 1950s.
The mutation is tailor-made for the region, where winds can sometimes be very strong. It is widely known for creating exemplary balanced and complex coffees. We ourselves like to return to Hacienda Sonora from time to time. In addition to the fact that we always get fine beans from here, we particularly appreciate their skillful preparation methods. Here, the Villa Sarchi beans have been prepared using the dry method, where both the shell and the mucilage have dried into the bean. It takes great skill to get it this good and we are as pleased with this harvest as we were when we roasted the same variety last time, at Christmas 2023.
Natural processed coffees make excellent espressos and we have roasted just such from Hacienda both for filter and espresso over the years. The expression is almost a bit vinous, with lots of berries, rum, raisins and chocolate of the finer varieties in both taste and aroma.
This green coffee arrived at the roastery on August 16th 2024 and is from the 2023/2024 harvest.
