The product image opposite does not do Maragogype justice. Only when you hold the green coffee in your hand and compare it to the size of the coffee you usually roast will you understand why the Arabica variety is actually called the elephant bean!
The Maragogype elephant bean is a full 40% larger than its more common Arabica cousins and, unfortunately, it is now almost endangered. It only grows in a few places on earth and we found this one in Chiapas, on the border with Guatemala in southern Mexico. The large beans give us a balanced flavor picture, with a sweet and chocolate mouthfeel. The lively acidity comes in the form of green apple.
