A chain of dormant volcanoes runs through the state of Oaxaca in southern Mexico, and it is these volcanoes that, over millennia, have shaped the mineral-rich soil that has made the Pluma coffee region famous. Here, generations of small farmers have carefully tended their land, and coffee is one of the state’s proudest traditions. At the same time, it must be said: finding truly excellent specialty coffee from Mexico at a reasonable price has become an increasingly difficult challenge. Global green coffee prices have reached record levels, and Mexico’s own coffee culture is growing so rapidly that an increasing proportion of the country’s finest lots are now consumed domestically rather than exported. Add to that the pressures of climate change and the small farms—averaging just under three hectares—and you can see why a lot like this is worth seizing the opportunity to enjoy.

This lot comes from small-scale farmers in the mountains around Pluma Hidalgo and consists of the classic Typica and Bourbon varieties, grown at altitudes between 1,100 and 1,600 meters. Incidentally, Pluma is more than just a geographical name—it’s something of a seal of quality in Mexico, reserved for coffee from these very mountain slopes in the Sierra Madre del Sur. The coffee is processed using the wet method: the cherries are pulped, fermented, and rinsed clean before the beans are slowly dried, which brings out the natural elegance that has become the region’s hallmark. The green coffee has good density and consistent grading, and we roasted it ourselves to a medium roast primarily for filter brewing —which results in a coffee that’s exactly as smooth and refined as we want a Mexican coffee to be.

In the cup, this is a smooth and well-balanced coffee with a velvety, full-bodied flavor. The flavors lean toward berries and ripe stone fruit, while almond and a subtle nuttiness weave their way through the experience. Creamy milk chocolate ties it all together in a well-rounded, inviting cup with a long finish. A green coffee for the home roaster looking for a mellow and generous everyday coffee with a clear origin—and who knows how to appreciate a truly fine lot from Mexico when the opportunity arises.
