For many coffee roasters, Huila’s Pink Bourbon is a dream combination – a variety, a region and a process that together form one of the specialty coffee world’s most sought-after signature expressions. At an altitude of 1,600 meters in Bolívar, Alonso Bustos runs Finca El Mirador. After more than fifty years as a coffee farmer, in recent years he has chosen to focus entirely on specialty coffee – inspired by his children and with the future secured by grandchildren already showing interest in taking over. The farm covers four hectares, and every step of the way is characterized by Busto’s own philosophy: awareness, presence and care in every detail.

The micro-lot consists of 100% Pink Bourbon – a variety long thought to be a hybrid of red and yellow Bourbon, but now shown by genetic analysis to have its roots in Ethiopia, in closest affinity to some of the world’s most celebrated varieties, including Geisha. The genetic link is clearly visible in the cup, and explains why the variety has gone from obscure curiosity to something of a key player in modern Colombian prize-winning lotteries in just a decade. The berries are hand-picked at full maturity and dried on sun-protected beds under close supervision, where they are regularly raked to achieve even drying – a patient process that preserves the complexity of the fruit without tipping over into an oversweet or alcoholic profile. The raw coffee responds best to medium to light roasting for filters and pourovers, where the genetic characteristics of the variety are allowed to unfold.

In the cup, the batch shows why the roasting world returns to Pink Bourbon time and time again. Dark chocolate adds texture and depth, while milk chocolate rounds out with a smooth sweetness. On top of this foundation, tropical fruit brings out freshness and vibrancy – an aromatic character that recalls why the variety is often mentioned in the same breath as Geisha. Complex but balanced, and a clear reminder of why Pink Bourbon from Huila is in a class of its own.
