When you brew coffee, you want to keep the water at a consistently high temperature throughout the brewing process. It is usually said that the temperature of the water should be between 92-96°C. If the water is too hot, the coffee will generally be bitter and the extraction will be too great. Water that is too cool makes the coffee tasteless, the coffee is not extracted sufficiently.
No brewer starts at 92°Cat the first drop, i.e. as soon as it hits the ground coffee. For some (cheaper) variants, it can take 80-100 seconds to reach this temperature. The result will be the same. For Wilfa Performance, it takes only 6 seconds from the first drop hitting the coffee until the water is 92°C. After that, the water stays between 92-96°Cthroughout the brewing process. We know of no other coffee maker in this price range that achieves this great result, is as stylish and lasts as well.
