It is the second-oldest of the family\u2019s farms, located in Yasica Sur in the lush highlands of Matagalpa\u2014a region considered one of Nicaragua\u2019s very best for specialty coffee. Today, El Limoncillo is more than just a coffee farm: it\u2019s also run as an ecotourism farm where the rich flora and fauna are carefully preserved, with shade trees and natural zones that both protect biodiversity and create ideal conditions for the coffee. It is a place where nearly a century of agricultural tradition meets modern, conscious sustainability efforts.   <\/p>\n<p>The farm grows <strong>Red Catuai<\/strong> \u2014a cross between Mundo Novo and Caturra\u2014at altitudes ranging from 850 to 1,200 meters. It is a compact and productive variety that, when processed correctly, yields a coffee of high and consistent quality, and the washed process brings out a clean, predictable character with distinct sweetness. The cherries are pulped, fermented under controlled conditions, washed, and dried slowly. The green coffee has good density and a consistent grade, making it a pleasure to work with in the roaster. We roasted it ourselves <strong>to a dark roast<\/strong>\u2014a roast level that truly suits this lot: it has the finesse to handle a dark roast without becoming flat or burnt. The profile is designed primarily for <strong>filter<\/strong> brewing, but it also works excellently as <strong>an espresso or in a moka pot<\/strong>, where the body and sweetness take on extra depth.     <\/p>\n<p>In the cup, this is a smooth and delicate coffee with a rich, creamy body. Floral notes meet sweet vanilla in the aroma, while hazelnut and milk chocolate weave gently through the flavor. A subtle hint of cedar adds depth and complexity, preventing the cup from becoming one-dimensionally sweet. A green coffee for the home roaster seeking a dark roast with both finesse and strength\u2014and a cup worth savoring, with generations of family expertise behind every bean.   <\/p>\n<p><em>This
